CUBINI ZABOV
DARK SENSE
Ingredients for 6-8 servings
150 g Zabov Classic
200 cc fresh cream, whipped
30 g icing sugar
3 sheets gelatine
2 oranges, grated zest
5 egg yolks
100 g dark chocolate
1 orange for garnish
Method
Melt the chocolate in a bowl over a pan of hot water. Melt the gelatine in another bowl and add it to the chocolate with the grated zest of 2 oranges. Whisk the egg yolks with the sugar to a pale foam then add the Zabov Classic and the lukewarm chocolate. While stirring vigorously, slowly add the whipped cream. Use a piping bag to fill the glasses with the cream and put them in the fridge for 2 hours.
Just before serving, decorate the glasses with thin rings of orange peel and curls of whipped cream.
